Chai Beetroot Latte

 

This pretty pink drink is simply a strongly brewed yogi chai (chai without caffeine) blended with freshly squeezed almond milk, coconut oil, honey or maple syrup and beet root powder. Beet root powder is loaded with antioxidants, calcium, iron, potassium, folate, manganese and nitrates. Nitrates help to relax the blood vessels; lowering blood pressure, increasing blood flow to the brain and enhancing athletic endurance. Beet powder can be purchased from your local health food store. I purchased mine on line from Organic Matters out of Nelson B.C.

 

 

Ingredients:

Serves 2

  • 11/2 cups of strong yogi chai tea (Add 2 Tbsp. of chai tea to boiled water. Allow to steep for 5 min.)
  • 11/2 cups of fresh almond milk (or store bought almond milk)
  • 2 Tbsp. of coconut oil
  • 2 Tbsp. of raw honey or maple syrup
  • 1/2 tsp. of pure vanilla extract
  • 2 tsp. of beet root powder

Combine the strained chai tea and almond milk in a small saucepan. Heat over medium heat. In a blender combine the hot chai and almond milk with coconut oil, sweetener, vanilla and beet root powder. Blend until smooth and frothy.

Pour into two large mugs. To make the heart I sprinkled a little beet root powder on top and then swished it into a heart shape with the end of a chopstick!
