Dukkah is an Egyptian condiment that is commonly a mixture of roasted hazelnuts, cumin, coriander, sesame seeds and sea salt. I recently attended a lecture at The Light Cellar in Calgary on thyroid health and created a thyroid nourishing dukkah rich in selenium and iodine. I used selenium rich brazil nuts in place of hazelnuts and powdered kelp along with a little Himalayan pink salt. It is delicious sprinkled on just about everything and easy to incorporate daily into your diet! If you haven’t experienced the Light Cellar on Bowness Road in Calgary I highly recommend it! It has changed my life!
Ingredients:
- 1 cup of raw organic brazil nuts
- 1/3 cup of black sesame seeds
- 3 Tbsp. of whole coriander
- 3 Tbsp. of whole cumin
- 1 tsp. of red pepper flakes
- 3 tsp. of kelp powder
- 1/2 tsp. of himalayan pink salt
In a medium sized fry pan combine sesame seeds, coriander, and cumin over medium heat. Stir constantly until the spices become fragrant and the sesame seeds begin to pop. Be careful not to burn the spices. Remove from the heat and allow to cool slightly.
In a food processor combine the toasted seeds and spices with the raw brazil nuts, kelp powder, red chili flakes, and pink Himalayan salt. Process until the brazil nuts are broken down but not powdered. You want the nuts to maintain their texture. Store in a mason jar in the fridge. Sprinkle on everything from salads to rice or quinoa, veggies, avocado toast or popcorn!
