Strawberry Elderflower Power Limeade

The ancient Greeks, Romans and French dined on flowers to enhance the flavour of food and also for their medicinal qualities. Elderflowers (which are rich in antibacterial and antiviral fighting compounds) and fresh organic strawberries pair beautifully in this cool stevia sweetened low cal summer brew! Edible flowers are rich in carotenoids (which gives them their colour) and act as precursors for vitamin A. They also contain a very rare carotenoid called Lutein that is a powerful antioxidant that is known for supporting eye health. Ingredients:

Makes about 6 servings

  • 6 cups of water
  • 1/3 cup of dried elderflowers
  • 10 large organic strawberries
  • 1/2 tsp. of powdered stevia
  • 3 Tbsp. freshly squeezed lime juice

Bring 6 cups of water and the dried elderflowers to a boil in a large saucepan . Turn off the heat and allow to steep for about 15 minutes.

Strain the elderflower tea into a large pitcher, discard the steeped flowers.

Allow to cool slightly. Combine 3 cups or so of the elderflower tea in a blender with the 10 strawberries. Blend until smooth. Strain the mixture back into the pitcher with the reserved elderflower tea.

Add the powdered stevia and lime juice to the tea. Stir well and refrigerate. Feel free to add more stevia or lime to your liking!

Serve with a squeeze of lime over lots of ice!
