Mint Chip Smoothie

Does anyone else feel like they are thriving on smoothies in this summer heat? If you like Chocolate Mint Ice Cream, you will love this one! If you don’t have mint growing in your garden, most supermarkets carry big bunches of fresh mint at a reasonable price. I love to add Sun Warrior Collagen Building Protein to my smoothies. It is sweetened with stevia and adds great flavour without sugar laden calories. Protein powder can be replaced with a two pitted medjool dates instead of one and a tbsp. of hemp seeds if desired.

Ingredients:

  • 1 banana frozen in small chunks
  • 1/2 cup packed fresh organic kale or spinach
  • 1/3 cup of fresh mint
  • 1 pitted medjool date
  • 1 tbsp. cacao nibs
  • 1/2 cup unsweetened vanilla oat milk
  • 2 ice cubes
  • 1 scoop of Sunwarrior collagen building protein

Combine all ingredients in a high speed blender. Blend until smooth and creamy, using the tamper to ensure that the ice and frozen banana are well incorporated. Serve topped with a sprig of fresh mint and a sprinkling of raw cacao nibs!
